How to Make Fluffy Taisan Bread (Filipino Chiffon Cake)

Create a delectable Taisan loaf with this recipe, resulting in a perfectly sliced cake that doubles as delightful mamon. Skillfully whip up a fluffy meringue base, expertly incorporate it into the batter, and finish by adorning with delectable Arla cheddar.

Cook: 40 to 45 minutes for loaves, and 12 to 15 minutes for mamon
Temperature: 388 degrees F (170 degrees C)
Gear: 8.2” x 4.2” x 2.5” loaf pan

Ingredients

Set A:

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt

Set B:

  • ⅓ cup cooking oil
  • ¾ cup granulated sugar
  • 4 egg yolks
  • 1 tsp vanilla extract

Set C:

  • 4 egg whites
  • ¼ tsp cream of tartar
  • ¼ cup granulated sugar

Set D:

  • ½ cup Arla unsalted butter, melted
  • 1 tbsp granulated sugar
  • ½ to 1 cup cheese, or Arla cheddar cheese , grated

Instructions

  1. Sift the Set A ingredients into a bowl and mix.
  2. Make a well in the center and add Set B ingredients. Mix to make a smooth batter and set aside.
  3. In a separate bowl, add your Set C ingredients. Beat the egg whites and cream of tartar until fluffy, then gradually add sugar. Continue beating until your meringue forms stiff peaks.
  4. Fold meringue into the batter and mix until just combined or until no white streaks are showing.
  5. Pour batter into a parchment-lined baking pan. Spread evenly and bake. To check its doneness, insert a toothpick. If it comes out clean, take it out of the oven.
  6. Let it cool for 10 minutes before transferring to a wire or cooling rack to cool completely.
  7. Brush the baked loaf with melted Arla unsalted butter, then top with the rest of Set D ingredients.

Important Tips for Making Fluffy Taisan Bread

While messing up this effortless dessert is almost impossible, there are ways to improve it. Here are a few essential Taisan recipe tips to remember to make the fluffiest and most delicious loaf.

  • Use grated cheddar cheese for your topping. Try Arla’s cheddar cheese to achieve a rich and creamy texture for your topping. Arla’s cheddar cheese offers a perfect balance of sharpness and melt-in-your-mouth goodness, elevating your Taisan loaf to a new level.

  • Experiment with flavored extracts to give your plain cake base any flavor you desire. Try adding a teaspoon or two of vanilla extract as your base. For unique twists, you can also explore other extracts like pandan, ube (purple yam), or lemon.
  • Add food coloring to your Taisan bread to match any occasion. You can also try matching the color of the loaf with the flavor you’ve put. Purple food color for ube and green for pandan.
  • Remember to fold the meringue in, not stir. Folding prevents it from deflating the air you’ve just incorporated. Do not overmix. Mixing vigorously will cause your bread to deflate while baking.
  • Tap your pan to remove the air bubbles. While you want fluffy Taisan bread, it shouldn’t be full of air pockets. Tapping your pan once or twice on a surface will force trapped air bubbles to rise to the top and pop.
